5 A Day Stir Fry

Eight types of veg are packed into this simple stir fry. An easy way to make sure you get your 5 a day.

Method:

  1. Combine the light soy sauce, sugar, rice wine vinegar, black pepper, and sesame oil in a small bowl to make the stir fry sauce. Set aside.
  2. Thinly slice the carrot, pepper, red onion and mushrooms. Chop the baby corn into chunks. Roughly chop the mangetout and pakchoi. Crush the garlic. Set aside.
  3. Slice the chicken breast. Set aside.
  4. Heat the vegetable oil in a large frying pan or wok on the highest heat. Wait until the oil is very hot.
  5. Fry the chicken slices until cooked through. Take out of the pan and set aside.
  6. Add a little more oil into the pan and allow to heat up again. Add the carrots and peppers first. Stir and fry for 1 minute.
  7. Next, add the baby corn and red onion. Stir and fry for 2 minutes.
  8. Next, add the crushed garlic, mangetout, and mushrooms. Stir and fry for 2 minutes.
  9. Next, add the beansprouts and pakchoi. Just as the pakchoi starts to wilt, add the stir fry sauce and cooked chicken. Mix well and cook through for one more minute before serving hot.

  • Sugar – 1 tbsp
  • Rice Wine Vinegar – 1 tbsp

  • Red Onion – 1

  • Mangetout – 30g
  • Mushrooms – 30g
  • Beansprouts – handful
  • Pak Choi – 3
