Aubergines Fritters

These crispy street snacks are hot and delicious, and perfect with fresh tomato chutney and a cold beverage.

Method:

  1. Wash and slice the aubergine into 2cm thick circles. Sprinkle with a little salt on each side and leave on kitchen paper. Pat dry after 2 minutes.
  2. Mix together the gram flour, bicarbonate of soda and salt together in a large bowl.
  3. Wash and finely chop the coriander and spring onion. Add to the bowl.
  4. Add 90ml of water to the bowl and mix together to form a loose batter.
  5. Heat the vegetable oil in a pan. When hot, coat the aubergine circles in the batter and gently add to the oi. Cook on each side for 2-3 minutes until crisp and puffy.

  • Spring Onion – 3
  • Vegetable Oil – 200ml
