Baked Crepes

Fun to make and filling, these crepes are super easy to make at home

Method:

  1. Sift the flour into a large bowl. Add the salt.
  2. Whisk together the egg and milk in a separate bowl.
  3. Gradually add the egg mixture to the flour, whisking to combine to make a thin batter without any lumps.
  4. Thinly slice the spring onions and add the batter, mixing through.
  5. Cover the batter with cling film and leave aside to rest for 20 minutes.
  6. Heat a large flat non-stick frying pan on a medium-high heat. Add enough oil to the pan to thinly coat the surface.
  7. Add a ladle of batter mix to the pan. Tilt the pan with a circular motion so that the batter coats the pan evenly.
  8. Cook the crepe on one side for 2 minutes. Flip the crepe carefully and cook on the other side for a further 2 minutes. Repeat the process until all of the batter has been used up.
  9. Place the cheese, ham and spinach in the centre of the crepe and roll to encase the filling. Repeat will all the crepes. Bake in the oven for 5 minutes until the cheese has melted.

  • Plain Flour – 120g
  • Salt – 1 tsp
  • Egg – 1
  • Whole Milk – 150ml
  • Spring Onions – 3
  • Vegetable Oil – 2 tbsp
  • Cheddar Cheese – 70g
  • Smoked Ham – 4 slices
  • Baby Spinach – 70g
