Lazy weekend breakfast pancakes with natural banana and honey sweetness and wholesome walnuts
Mix together the plain flour, wholemeal flour, oats, baking powder, caster sugar and salt in a large bowl.
Make a well in the centre of the mixture. Add the egg, oil and a little milk and stir. Gradually add the rest of the milk and stir to make a thick batter.
Leave the batter to rest for 20 minutes. Meanwhile, chop the bananas into chunks and roughly chop the walnuts.
Heat a frying pan on a medium heat and add a little oil. Using a ladle, place the batter in the pan. Use the back of the ladle to spread the mixture into a round pancake shape. Cook for three minutes on one side and then flip. Set aside the cooked pancakes.
Add butter the pan and add the bananas, honey and walnuts. Stir through. Cook the bananas until they have just softened and the sauce looks like caramel. Top the pancakes with the banana mixture.
