Blackberry & Balsamic Syrup

This syrup can be used as a salad dressing. This fruity syrup has a tangy back note, and works well with salads with rich, salty cheese.

Method:

  1. Place all of the ingredients into a saucepan. Bring to a simmer over a medium heat.
  2. Mash the berries into the liquid and stir occasionally. Reduce the heat slightly. Leave uncovered.
  3. Continue to simmer until the liquid has reduced by just under half
  4. Strain the mixture through a sieve. Discard the seeds.
  5. Pour the now smooth liquid into a clean glass container using a funnel.
  6. Store in the fridge. The dressing should keep for up to one month.
