Broccoli & Cashews

Perfectly cooked broccoli florets with toasted cashews

Method:

  1. Wash and chop the broccoli into florets.
  2. Blanch the florets by plunging them into boiling water for three minutes. Then transfer the broccoli into ice cold water. Drain and set aside. Slice the garlic cloves and red chilli and set aside.
  3. Heat the vegetable oil in a wok or large frying pan. Fry the cashew nuts until golden and toasted. Next, add the sliced garlic and fry for one minute.
  4. Add the broccoli to the pan and cook for two minutes. Add the oyster sauce and stir through thoroughly. Cook for two more minutes, finishing with slices of red chilli.

  • Broccoli – 1 head
  • Vegetable Oil – 2 tbsp
  • Garlic – 2 cloves
  • Cashew Nuts – 4 tbsp
  • Red Chilli – 1
  • Oyster Sauce – 4 tbsp
