Butter Bean Stew

A flavourful, vegetarian stew topped with sharp feta cheese and parsley. A tasty mid-week dinner.

Method:

  1. Chop the onion finely and crush the garlic cloves.
  2. Heat the olive oil in a saucepan over medium heat. Fry the onion until translucent. Add the garlic. Fry for 2 minutes.
  3. Add the chopped tomatoes and bring to the boil. Reduce to a simmer.
  4. Add the red wine vinegar, oregano, and brown sugar. Stir through.
  5. Add the butter beans and simmer for 15 minutes.
  6. Taste and season with salt & pepper.
  7. Crumble the feta and sprinkle the flat-leaf parsley over the stew to serve.

  • White Onion – 1
  • Garlic – 1 clove
  • Olive Oil – 2 tbsp
  • Chopped Tomatoes – 1 tin
  • Red Wine Vinegar – 1 tbsp
  • Dried Oregano – 1 tsp
  • Brown Sugar – 1 tsp
  • Butter Beans – 1 tin
  • Salt & Pepper
  • Feta – 100g
  • Flat-leaf Parsley – 10g
