Cheese Scones

This recipe is the perfect way to use up any leftover cheese.

Method:

  1. Grate the cheese. Set aside
  2. Finely chop the chives. Set aside.
  3. Sift the self-raising flour into a large mixing bowl. Add the salt and cayenne pepper.
  4. Add the butter and rub into the flour until crumbly.
  5. Add the grated cheese and chives.
  6. In a separate bowl, beat the egg with the buttermilk and mustard.
  7. Gradually add the egg mixture to the dry ingredients, mixing with a knife first and then using your hands. Be careful not to overwork the dough.
  8. Pre-heat the oven to 220 C.
  9. Roll out the dough evenly to a thickness of 2.5cm. Using a cutter, cut out 6 scones from the dough.
  10. Place them onto a baking tray lined with greaseproof paper. Brush the tops with milk, a sprinkle of cheese and a pinch of cayenne pepper.
  11. Bake them in the oven for 15-20 minutes until well risen and golden brown. Cool on a wire rack and eat warm.

  • Chives – 20g
  • Self-Raising Flour – 180g
  • Salt – ½ tsp
  • Cayenne Pepper – 1 tsp
  • Butter – 25g
  • Egg – 1 large
  • Buttermilk – 3 tbsp
  • English Mustard – ½ tsp
  • MilkCheshire Cheese – 20g
