Cherry Tomato, Mozzarella & Basil Bruschetta

A classic Italian combination of flavours, on top of toasted bread, makes a delicious starter or snack.

Method:

  1. Quarter the cherry tomatoes and transfer them to a bowl. Drizzle with balsamic vinegar and extra virgin olive oil and mix through. Set aside.
  2. Tear the mozzarella ball into small pieces and set aside.
  3. Finely slice the basil leaves and set aside.
  4. Toast the bread slices and gently rub with a clove of garlic.
  5. Assemble the bruschetta by topping the bread with the cherry tomatoes, then mozzarella, then basil. Season with sea salt and black pepper and drizzle over a little more olive oil.

  • Garlic – 1 clove
  • Italian Bread – 4 slices
  • Sea Salt and Black Pepper
