These healthy chicken kebabs can be paired with any grilled vegetables. Perfect enjoyed in warm pitta bread with fresh tatziki.
Crush the garlic. Combine the olive oil, lemon juice, red wine vinegar, oregano, basil, thyme, salt and pepper and crushed garlic in a large bowl.
Cut the chicken breast into small bite-sized chunks. Add to the bowl and mix thoroughly. Leave to marinate for one hour.
Soak the wooden skewers in water for 30 minutes. In the meantime, chop the courgette, peppers and onions into small bite-sized chunks. Set aside with the cherry tomatoes and button mushrooms.
Skewer the vegetables and chicken pieces onto the wooden skewers until all the ingredients have been used up. Grill the kebabs in the oven for 20 minutes, turning half way, until the chicken has cooked through.
Serve with pita bread, tzatziki and chilli sauce. You can use halloumi cheese or lamb instead of chicken in this recipe.
