These kebabs are great made in the oven, under the grill or over a bbq.
Peel and grate the ginger. Crush the garlic cloves. Juice the lemon. Add to a large bowl.
Add all the other ingredients to the bowl and mix well.
Cut the chicken thighs into bite-sized pieces, trimming off any excess fat. Transfer to the bowl. Coat the chicken pieces with the marinade. Cover with cling film and marinate for at least 30 minutes, ideally overnight.
Place the chicken pieces on a lightly oiled grilling tray. Grill the marinated chicken pieces at the highest heat for 15 minutes, turning halfway through. You can do this in the oven or on a barbeque.
