Chilli Con Carne

This chilli can be enjoyed in a burrito, with rice or on a jacket potato, with a side of sour cream.

Method:

  1. Finely chop the onion and crush the garlic. De-seed the green chilli and chop finely. Set aside.
  2. Heat the vegetable oil in a large saucepan on a medium heat. Fry the onion for 3 minutes.
  3. Add the garlic and green chilli and fry for 3 minutes.
  4. Add the minced beef and turn up the heat. Break up the meat using a wooden spoon. Cook for 3 minutes.
  5. Add the chilli powder, cayenne pepper and ground cumin. Stir through.
  6. Add the drained kidney beans and stir through. Add the tinned tomatoes and tomato puree and a splash of warm water. Bring to the boil, then turn down to a simmer for 15 minutes.
  7. Season the chilli with sugar, salt, pepper and finish with fresh lime juice. Garnish with roughly chopped fresh coriander.
  8. Serve the chilli with rice, in a tortilla wrap, or with a jacket potato.

  • White Onion – 1
  • Garlic – 2 cloves
  • Green Chilli – 1
  • Vegetable Oil - 3 tbsp
  • Minced Beef – 500g
  • Chilli Powder – 1 tsp
  • Cayenne Pepper – ½ tsp
  • Ground Cumin – 1 tsp
  • Kidney Beans – 1 tin
  • Tinned Tomatoes – 1 tin
  • Tomato Puree – 3 tbsp
  • Sugar – 1 tsp
  • Salt – 2 tsp
  • Pepper – ½ tsp
  • Lime – ½
  • Fresh Coriander – 10g
