Eton Mess

This classic Summer-time dessert is made healthier by using Greek yogurt instead of double cream.

Method:

  1. Defrost the strawberries and raspberries.
  2. Break up three of the meringues into small pieces into a large bowl.
  3. Mix the broken meringues pieces into the Greek yogurt in a large bowl.
  4. Once combined, fold in the most of the berries, setting a little aside.
  5. Crush the remaining meringue on top and spoon over the remaining berries. Garnish with fresh mint. Serve immediately.
