Express Fried Rice

Make this takeaway favourite yourself, for a fraction of the price!

Method:

  1. Beat the eggs in a small bowl. Mix in the black pepper and sesame oil. Set aside.
  2. Finely chop the carrots, red pepper and spring onions. Slice the mushrooms and thaw the frozen peas.
  3. Heat the vegetable oil in a large frying pan or wok. Add the cooked brown rice. Mix until completely heated through.
  4. Add the carrot, peas, red pepper, mushrooms and spring onions and stir through for 3 minutes.
  5. Add the light soy sauce and stir through. Push the rice to one side of the pan. Pour the beaten egg mixture in the gap and leave for about 15 seconds until it begins to set.
  6. Briskly swirl the egg to break it up and mix together thoroughly with the rice.
  7. Stir-fry for 2 minutes until the egg is cooked. Serve hot.

  • Vegetable Oil – 2 tbsp
  • Cooked Brown Rice – 400g
  • Light Soy Sauce – 3 tbsp
