Gambas Pil Pil

Succulent king prawns in a garlic, chilli and parsley olive oil sauce. Perfect for enjoying with crusty bread shared with friends.

Method:

  1. Peel and slice the garlic cloves, roughly chop the parsley and de-seed the dried chillies. Set aside.
  2. Add olive oil to a frying pan on a medium-high heat. Once the oil is heated, add the garlic, parsley and dried chillies. Fry for 30 seconds.
  3. Add the prawns. They will quickly turn pink. Turn over the prawns and add the paprika and cayenne pepper.
  4. Remove the pan from the heat before the prawns are completely cooked as they will continue to cook from the residual heat of the pan and you don’t want them to overcook.
  5. Season with salt and serve immediately with crusty bread.
