Goat’s Cheese & Red Onion Tart

A delicious vegetarian tart with rich goat's cheese and a homemade red onion chutney base.

Method:

  1. Make the red onion chutney. Finely slice the red onion. Heat the olive oil in a saucepan and sauté the red onions for 10 minutes on a medium heat.
  2. Add the brown sugar and balsamic vinegar. Stir well to dissolve the sugar. Turn down the heat and reduce for 5 minutes.
  3. Pre-heat the oven to 180C.
  4. Roughly chop the walnuts and strip the thyme leaves off the stem. Slice the goat’s cheese. Set aside.
  5. Unroll the puff pastry sheet and cut into 4 rectangles. Place onto a baking tray lined with greaseproof paper.
  6. Spoon on the chutney and spread onto the pastry. Add slices of goat’s cheese and sprinkle with thyme and walnuts.
  7. Brush the edges of the tart with beaten egg. Bake in the oven for 10-12 minutes, until golden brown.

  • Walnuts – 30g
  • Thyme – 4 stems
  • Goat’s Cheese – 1 log
  • Puff Pastry – 1 sheet
  • Egg – 1
