This Greek salad is full of sunny Mediterranean flavours and fresh ingredients.
Thinly slice the red onion. Add a little red wine vinegar, mix and set aside.
Make the dressing. Crush the garlic into a small bowl and add the lemon juice and red wine vinegar. Add the extra virgin olive oil, oregano and salt. Finely chop the parsley and add to the dressing. Mix well.
Cut the tomatoes into wedges, slice the cucumber into half-moon slices and chop the green pepper into small chunks. Transfer to a large bowl.
Slice the olives and add to the bowl.
Crumble the feta into the bowl. Add the red onion and the dressing. Toss together before serving.
