Grilled Chicken Tacos

Tasty and healthy snack-sized tacos are even more delicious when served with homemade guacamole and salsa.

Method:

  1. Chop the chicken thighs into small chunks and transfer to a bowl.
  2. Crush the garlic clove. Juice the lime. Add to the bowl.
  3. Add the Mexican Spice Mix to the bowl and mix in with the chicken pieces thoroughly. Leave to marinate, ideally overnight.
  4. Heat the vegetable oil in a large griddle pan over high heat. Add the chicken pieces to the pan and spread out well. Cook the chicken on each side until lightly charred.
  5. Assemble the tacos by topping small tortillas with the grilled chicken. Add some pico de gallo and guacamole on top.
