Morning Muffins

Wholesome and healthy morning muffins, easy to make in advance for busy weekdays ahead.

Method:

  1. Pre-heat the oven to 180C. Line a muffin tray with muffin cases.
  2. Roughly chop the walnuts.
  3. Mix together the dry ingredients in a large bowl. Set aside.
  4. In a separate bowl, whisk the egg and beat in the coconut oil, banana and honey.
  5. Combine the wet and the dry ingredients and mix thoroughly to make a batter. Add the milk to loosen up the batter.
  6. Once combined, use an ice cream scoop to portion out the batter into the muffin cases. Scatter extra nuts and seeds on the top of the muffins.
  7. Bake the muffins for 25 minutes. Transfer to a cooling rack once baked.

  • Plain Flour – 85g
  • Wholemeal Flour – 40g 
  • Oats – 70g
  • Baking Powder – 1 tsp 
  • Caster Sugar – 2 tbsp 
  • Salt – ½ tsp 
  • Egg - 1 
  • Vegetable Oil – 1 tbsp
  • Whole Milk – 200ml 
  • Bananas – 4
  • Walnuts – 2 tbsp
  • Butter – 2 tbsp
  • Honey – 1 tbsp
