Pad Thai

Thailand's most famous noodle dish, pad thai is easy to make at home as long as you have all the right ingredients to hand.

Method:

  1. Thinly slice the red onion. Wash and cut the spring onions into 3cm pieces.
  2. Add the dried rice noodles to a large bowl. Submerge in hot water for 5 minutes, stirring occasionally.
  3. Meanwhile, make the Pad Thai sauce by combining the tamarind, fish sauce, soy sauce, sugar and lime juice in a small bowl. Set aside.
  4. Crack the eggs into a small bowl and beat. Set aside.
  5. Crush the peanuts using a pestle and mortar. Set aside.
  6. Drain the soaked rice noodles into a colander.
  7. Heat the vegetable oil in a large frying pan. Add the sliced red onion and fry for 2 minutes.
  8. Add the whisked egg to the pan and scramble with the onions.
  9. Next, add the rice noodles and stir through well.
  10. Next, add the Pad Thai sauce. Add a splash of water to the pan and cook for 1 minute.
  11. Next, add the beansprouts and spring onions. The noodles should be well combined and the vegetables cooked through. Add the cooked chicken and prawns.
  12. Garnish with a lime wedge and crushed roasted peanuts on the top.

  • Fish Sauce – 2 tbsp 
  • Light Soy Sauce – 2 tbsp

  • Roasted Peanuts – 2 tbsp

  • Cooked Chicken Breast – 200g
  • Cooked King Prawns – 200g
  • Lime (cut into wedges) - 1
