Penne Puttanesca

Simple store cupboard ingredients come together to make this delicious pasta dish.

Method:

  1. Boil a kettle of water. Transfer the water to a large saucepan.
  2. Add the penne and salt and cook on a high heat with the lid on for 10 minutes.
  3. Meanwhile, crush the garlic and finely chop the anchovies and capers.
  4. Heat olive oil in a frying pan on a medium heat. Add the garlic and anchovies and fry gently.
  5. Add the chilli flakes and capers to the pan. Stir through.
  6. Add the passata and olives. Cook for two minutes. Season with salt and pepper.
  7. Drain the penne in a colander. Add the penne to the frying pan and toss into the sauce.
  8. Sprinkle with finely chopped parsley.

  • Capers – 1 tbsp

  • Chill Flakes – 1 tsp
  • Passata – 300g
  • Pitted Green Olives – 40g
  • Pitted Black Olives – 40g
  • Flat-Leaf Parsley
