Pilau Rice

The essential accompianment to meat, fish or veg curries. It's surprisingly easy to make your own pilau rice at home.

Method:

  1. Wash the basmati rice several times in cold water, until the water runs clear.
  2. Finely slice the white onion.
  3. Melt the butter in a large saucepan. Add the onion and cook for 2 minutes on a medium heat, until softened.
  4. Crush the cardamom. Add the cardamom, cloves, cinnamon and bay leaves to the pan and cook for 2 more minutes.
  5. Turn up the heat to high and add the washed rice to the pan and coat well with the onions and spices.
  6. Add the salt and crumble in the stock cube. Add 600ml of warm water to the pan.
  7. Bring the mixture to the boil. As soon as it reaches the boil, turn down the heat to the lowest setting and leave the rice to simmer. Cover the pan with a tight-fitting lid.
  8. Turn off the heat after 10 minutes and leave the rice to stand for 5 more minutes before serving.
  9. The rice should have absorbed all the water. Fluff up the rice with a fork before serving.

  • White Onion – 1  
  • Butter – 30g 
  • Cardamom – 4  
  • Cloves – 5 
  • Cinnamon Stick – 1 
  • Bay Leaves – 2 
  • Salt – 1 tsp
  • Vegetable Stock Cube – 1 
  • Water – 600ml
