Quesadilla

Quesadillas are like Mexican paninis and can be filled with a variety of vegetables or meat. Great as a filling snack or for sharing.

Method:

  1. Grate the cheddar cheese. Set aside.
  2. Chop the spring onions finely. Set aside.
  3. Finely slice the red pepper. Set aside.
  4. Shred the chicken breast into small pieces. Set aside.
  5. Take one of the wraps and add a few drops of Tabasco. Top with grated cheese, spring onion, red pepper, shredded chicken and sweetcorn. Place another wrap on top. Repeat with the remaining wraps.
  6. Heat a little vegetable oil in a frying pan. Carefully place the quesadilla in the pan for 3 minutes. Brush the top of the quesadilla with a little vegetable oil.
  7. Carefully flip the quesadilla over. Cook on the other side for a further 3 minutes. Repeat with the other quesadilla.
  8. Transfer to a plate and slice into quarters.

  • Mini Tortilla Wraps – 4
  • Cheddar Cheese – 60g
  • Spring Onion – 2
  • Red Pepper – 1/2
  • Cooked Chicken Breast – 1
  • Sweetcorn – 2 tbsp
  • Tabasco
  • Vegetable Oil
