Red Pesto

Homemade pesto stirred through pasta is a simple, light meal. This red pesto includes chilli and sundried tomatoes for extra intense flavour.

Method:

  1. Boil water in a kettle. Transfer to a large saucepan with salt. Add the pasta and cook for 10 minutes.
  2. Meanwhile, make the pesto. De-seed the chilli and grate the parmesan. Juice the lemon. Combine all the ingredients in a food processor or blend using a hand blender until smooth. Taste and season.
  3. Drain the pasta and add to a large serving bowl. Stir the pesto through and finish with an extra grating of parmesan and black pepper.

  • Red Chilli – 1 
  • Basil – 30g 
  • Walnuts – 50g 
  • Garlic – 2 cloves 
  • Lemon – 1
  • Parmesan – 4 tbsp 
  • Extra Virgin Olive Oil – 4 tbsp 
  • Salt & Pepper
