Roast Pork

Juicy roast pork with crispy crackling is easy to achieve using this recipe.

Method:

  1. Take the pork joint out of the fridge 30 minutes before roasting so it can reach room temperature.
  2. Pre-heat the oven to highest setting.
  3. Dry the pork joint with kitchen paper and leave for 30 minutes for the skin to dry.
  4. Check that the skin is scored evenly. Add more scores with a knife if necessary.
  5. Rub over a little oil and salt the skin very well.
  6. Roast the joint for 30 minutes at the highest heat, then turn down the heat to 160C and roast for 2 hrs.
  7. Rest the joint for 15 minutes before carving.
