Roasted Carrots

Sweet and colourful roasted carrots go well with any Sunday lunch

Method:

  1. Pre-heat the oven to 180C.
  2. Wash and trim the carrots and transfer to a roasting tin.
  3. Melt the butter in the microwave. Toss the carrots with the olive oil and butter.
  4. Roast the carrots for 30 minutes.
  5. Drizzle over the vinegar and honey and toss with the carrots. Roast for a further 10 minutes.
