Roti

A simple Mauritian flatbread recipe, perfect for mopping up curries, or even for breakfast.

Method:

  1. Add the flour, sugar, and salt to a large bowl.
  2. Add the water and knead for 5 minutes.
  3. Taking a small ball of the dough, roll it out onto a lightly floured surface, making a circle.
  4. Brush the surface lightly with oil and fold in the sides into the middle, followed by the top and bottom. This creates the layers inside the roti. Set aside. Repeat with one more ball of dough.
  5. Taking the folded dough made first, roll it out again into a thin circle. Heat a large frying pan on medium heat. Add the roti to the pan without any oil. Brush the top with a little oil. Cook on one side for 2 minutes and then flip over.
  6. Repeat with the remaining dough.
