Salmon Parcels

Fuss-free, mess-free salmon, baked with tender-stem broccoli and Japanese flavours.

Method:

  1. Pre-heat the oven to 180C.
  2. Crush the garlic and slice the ginger.
  3. In a small bowl, stir together the soy sauce, honey, garlic, mirin and sesame oil and set aside.
  4. Use scissors to cut out two squares of foil, each about a 30cm square. Brush each piece of foil with a little oil.
  5. Place a couple of broccoli stems on the foil square, then place a salmon fillet on top and scatter over the sliced ginger.
  6. Spoon the sauce over each salmon fillet. Fold the edges of the foil together to seal and place the parcels on a lined baking tray. Repeat with the other foil square.
  7. Bake the parcels in the oven for 15-20 minutes.
  8. Remove the parcels from the oven and leave to stand for a few minutes.
  9. Remove the salmon and vegetables from the parcel carefully and serve with rice and a garnish of sliced spring onions, red chilli and sesame seeds.

  • Tender-stem Broccoli – 4
  • Salmon Fillets – 2
  • Spring Onions – 2
  • Red Chilli – 1
  • Sesame Seeds – 1 tsp
