Spaghetti Carbonara

It requires just a handful of ingredients and 10 minutes to make this simple, satisfying and comforting pasta dish.

Method:

  1. Boil a kettle of water. Transfer the water to a large saucepan. Add the spaghetti and salt and cook on a high heat with the lid on for 10 minutes.
  2. Meanwhile, fry the pancetta in a frying pan. Crush the garlic clove and add to the pancetta. Fry until the pancetta is slightly crispy. Turn down the heat to the lowest setting.
  3. Beat the eggs in a bowl. Finely grate the parmesan and add to the beaten eggs.
  4. Drain the spaghetti in a colander, retaining some of the cooking water. Add the spaghetti to the frying pan with pancetta and toss together.
  5. Slowly add the egg and parmesan mixture to the spaghetti and toss together to form a light, creamy sauce. The spaghetti should be warm enough to cook the egg but not scramble it.
  6. Serve with extra parmesan and freshly ground black pepper.
