Sticky Ribs

These pork ribs are great for sharing and taste great with this simple sauce.

Method:

  1. Pre-heat the oven to 200C.
  2. Line a baking tray with foil and lightly oil.
  3. Transfer the ribs onto the baking tray, making sure the ribs are not touching. Add a little water to the baking tray. Cover the ribs with foil.
  4. Roast in the oven for 70 minutes.
  5. Meanwhile, crush the garlic. Combine the hoisin sauce, ketchup, honey, dark soy sauce, garlic, rice vinegar and five-spice powder in a small bowl to make the glaze.
  6. After 70 minutes, take the ribs out of the oven and brush over the glaze, making sure to brush each side of the ribs.
  7. Roast for 15 more minutes, or until the ribs are cooked through and sticky.
  8. Cook the chicken in a frying pan until golden brown and cooked through.
  9. Top each cucumber slice with a piece of cooked chicken and finely chopped red chilli.
