Sweet Potato Wedges

A healthier, more nutritious version of potato wedges and kids will love the natural sweetness.

Method:

  1. Pre-heat the oven to 200C and line a large baking tray with foil.
  2. Wash the sweet potatoes thoroughly. Cut the potatoes into chunky wedges. There is no need to peel the sweet potatoes.
  3. Transfer the wedges to a large bowl and toss the wedges in the dried thyme and rapeseed oil until evenly coated. Season well with salt and pepper.
  4. Spread the wedges out on the baking tray and roast in the oven for 20 minutes, turning halfway through. The wedges will be cooked through and golden.
