Tomato Puffs

These tomato puffs are like mini puff pastry pizzas. Kids will love cutting out and topping the pastry circles.

Method:

  1. Pre-heat oven to 200C.
  2. Using a round pastry cutter, cut out 15 circles from the puff pastry sheet. Lay the circles carefully onto a greaseproof paper lined a baking tray.
  3. Place a little green pesto in the centre of each circle.
  4. Slice the tomatoes into circles. Cut a cross in the centre of each tomato round. Season with salt and pepper and drizzle with olive oil.
  5. Place the tomato onto the centre of the pastry circle, covering the pesto.
  6. Brush the edges with beaten egg.
  7. Bake for 15 minutes until the pastry is risen and golden.
  8. Once cooled, garnish with fresh basil leaves.
