Tortilla

A classic tapas dish made with simple ingredients. Perfect served hot or cold.

Method:

  1. Wash, peel and thinly slice the potatoes.
  2. Heat the olive oil in a frying pan. Once hot, fry the potatoes for 5 minutes, or until cooked, but not coloured.
  3. Beat the eggs in a bowl and season with salt. Once the potatoes are cooked, drain onto kitchen roll and then add to the eggs. Combine thoroughly.
  4. Heat a small frying pan with a little oil on a low to medium heat. Add the egg and potato mix and cook slowly until the top becomes more solid.
  5. Add a flat cover, like a plate to the pan and quickly flip the pan over. Transfer the tortilla back upside-down into the frying pan to cook the other side. Cook for another few minutes, until cooked through. Transfer to a plate and serve hot or cold.
